Sunday Dinner

I am one lucky lady. My dear husband has gotten into the habit of preparing a marvelous feast for my consumption every Sunday. While I run around town tending to errands and visiting friends and family, he is in his glory watching football and grilling in the backyard. When I arrive home, a home cooked meal awaits.

He even takes orders! I've been in the mood for honey mustard chicken wings for months. I think I was reliving my old college days. My craving was finally satisfied today. Johnnycakes looked up a honey mustard chicken wing recipe on the Internet and made the best honey mustard wings I've ever eaten. They were sweet, sticky and smokey thanks to a smoking technique he applied using the backyard grill.

For a more traditional Sunday meal, he also prepared a delicious pork tenderloin on the grill which we topped with the sticky honey mustard glaze. Broccoli and a baked potato rounded out the delicious Sunday meal.

I know that I am completely spoiled by my grill master husband. In fact, I told him his meals have been so impressive that I feel like I'm being robbed of my womanhood. He shows me up with some regularity. I do try to pull my own weight a bit. I did make him a simple fried egg for breakfast with toast. I also had dish duty. It's all about teamwork!

A Dinner of Redemption

Tonight's dinner was all about redeeming ourselves for our week of eating junk and not cooking. We decided to not go too bold and start off easy. I was able to "redeem" myself by preparing the corn on the cob and purple "green" beans from last week's Farmer's Market. I was afraid that the corn would be rotten from remaining inside the husks all week but they were fine. The beans were still nice and crisp and not slimy or anything. We marinated and prepared our honey blackened pork (http://coupleofcooks.blogspot.com/2007/06/blackened-honey-pork.html and buttered veggies. Oh, and the purple green beans didn't stay purple just as others said. They were quite ordinary looking by the time they were done.

Okay. So we're back in business as far as dinner is concerned. Let's hope we can keep this up throughout the week!

Blackened Honey Pork

Despite a time crunch and some pressing domestic duties, we managed to crank out a nutritious and delicious dinner in Couple of Cooks style.

We enjoyed a crispy and sweet pork tenderloin, grilled yellow squash and zucchini and baked potatoes topped with a store bought guacamole sauce. Oh, and don't let me forget a garden salad as an appetizer with carrots, cucumbers, beets, croutons and Kraft Asian Sesame dressing (It's really good!).

Pork Tenderloin Marinade

2 TBSP. honey

2 TBSP. Dijon Mustard

1 tsp. thyme

2 sprigs fresh rosemary

salt and pepper

1/2 TBSP. Olive Oil

Coat the tenderloin with the marinade and refrigerate for at least a half hour before grilling.

Johnnycakes deserves all the credit for tonight's feast. All I did was cook two mini Russet potatoes in the microwave until soft. He accidentally let the pork get a little crispy because he was talking to some neighbors while the meat and squash were on the grill. Before he knew it, the tenderloin was charred and blackened on one side. It didn't matter thought because we both thought the smoky, crispy, charred flavor enhanced the sweetness from the honey marinade. We seasoned the cooked meat with some salt and it was extra tasty.

The veggies were pretty straightforward. I had extra guacamole sauce from the taco dip I made on Sunday and thought it might be fun to try on the the potato. It was a good idea because it gave it a little extra zip and it's always fun to try something new!
